Estate:
The Vin de Pays d'Oc region consists of the departments of Gard, Herault, Aude, and Pyrénées Orientales. Within this large area, Les Bories has the opportunity to select the best grapes and plots for its blends. Les Bories owns large areas of vineyards, mainly in the French Midi. They also purchase must for vinification and bottling. The vines are mostly planted on calcareous soil. Harvesting is done entirely by hand and the grapes are rigorously selected. Before fermentation, the solids are separated from the must so that a clear juice can be fermented. This makes the wine fresher and purer than fermentation of cloudy juices.
